Niche vanilla is rarely the dessert vanilla people expect. It is more often smoky, boozy, leathery or tobacco-adjacent, using the sweetness as a base rather than the point.
What vanilla is
Cured vanilla pods, or vanillin isolated from them. Vanilla absolute carries the rum and tobacco facets that synthetic vanillin alone does not.
